Natural White/White
Wine 1: Alessandro Viola Bianco
Alessandro Viola Note di Bianco is an organic natural white wine from Sicily's Terre Siciliane IGT, produced at his 7-hectare estate near Alcamo in northwestern Sicily. Made from 100% Grillo grapes grown on clay soils at 220 meters elevation, benefiting from cooling Mediterranean breezes. Hand-harvested grapes undergo spontaneous fermentation with indigenous yeasts in stainless steel tanks, followed by six months aging on lees. Bottled unfiltered and unfined with no added sulfites, representing Viola's non-interventionist philosophy that allows pure terroir expression of this native Sicilian variety. The nose shows bright aromas of ripe pear, citrus zest, white flowers, and Mediterranean herbs. The palate delivers lemon, stone fruits, thyme notes, pear skin bitters, with balanced acidity and a citrusy, salty finish. Perfect with seafood, light salads, Mediterranean dishes, or traditional Sicilian caponata with eggplant, olives, and fresh herbs.
Wine 2: Finca Parera Sasso
Sant Llorenç d’Hortons around 350 m of altitude, in l’Alt Penedès Montserratí. Pendes is an exciting region for natural wine making in Spain at the moment. A single young Xarel·lo vineyard from 1995 called “La Torreta”, with loamy-clayey soil, where the bedrock presses the fertile layer and facing southeast. Made from 100% Xarel·lo grapes. Bottled without any intervention or addition.
